I’m a vegetable lover. Have been, since early childhood according to my mother, who reported me reaching for frozen veggies before she could get ‘em into boiling water.
I’ve been wondering lately (God only knows why my mind meanders into these terrains), why there’s always much emphasis on consuming FIBER, and none on consuming roughage.
Seems to me, our intestinal tract needs this substance that’s found in leafy greens and myriad other vegetable sources, to move things along, and keep us “regular.”
I honestly wonder how in the world others live without a routine infusion of vegetables! Just can’t relate… especially lately, when my body is craving anything ‘lettuce-y.’ I’ve also had a penchant for canned beets recently, which are irresistible with a little balsamic vinegar. Vegetables are good for ya… besides, they even LOOK gorgeous!
There are companies pulverizing and powdering fruits and veggies for lazy peeps, touting that you’ll have increased vigor, stamina and health, if you swallow their ‘capsules’ … but doesn’t this take the JOY out of getting delicious nutrients the old fashioned way??
So, here I sit with my bowl full of chopped romaine lettuce, diced beets, small-cut tomatoes, fresh garlic, and purslane which is a ground cover that grows all over my backyard in summer, and is wonderfully edible! It’s in the watercress family, and sprouts up wild. To this mixture, I’ve added olive oil, a touch of balsamic vinegar, and some lemon pepper. TOO YUMMY!!!
Purslane is prolific and grows FAST, so when I pinch off the tops of clusters, they’re back within 24 hours.
I’m not a fanatic health nut, though I’ve always been interested in maintaining my well-being the best I can, re diet, emotional healing and growth, and so on. I eat my fair share of junk, too. Lately, I’m on a (full fat) strawberry ice cream kick. Since starting proper food combining 35 years ago, I’ve stayed skinny without any effort… and I eat EVERYTHING I want.
I figure what I put in my body all balances out, somehow (the ‘good’ vs the ‘bad’ consumption), and tasty extravagences are only accessible to us while we’re inhabiting these physical bodies~ so why deny ourselves?
Don’t let anyone tell ya roughage isn’t important. Figure out what fruits and veggies ya most like or can tolerate, and eat a little more of ‘em. Your digestive system (and all your organs) will thank you!
